A healthy way to use up your turkey leftovers! Simple and a perfect prep meal.

Ingredients

Leftover turkey

Carrots

Mangetout

Spring onions

Garlic

Cucumber

Edamame beans

Sticky rice (can use sushi rice!)

Coconut oil

Soy sauce 

Peak Blends Korean Wok Spice

Honey

Garlic

Fresh ginger – grated

Cornstarch

Rice wine vinegar

 

Method

  1. If you are using uncooked sushi rice, cook this first. If you are using a pre-cooked microwavable rice, you can leave this until later.

  2. Shred the turkey or cut into small strips.

  3. Finely chop cucumber into very small cubes.

  4. Heat a teaspoon of coconut oil into a pan and finely chop the garlic. 

  5. Add the garlic to the pan and stir fry for a minute or two – avoid the pan getting too hot otherwise the garlic will burn.

  6. Finely slice the carrots and trim the ends off the mangetout. You may want to finely slice the mangetout as well. Chop the spring onions into small pieces.

  7. Add the mangetout and edamame beans to the pan and add a tablespoon of soy sauce – stir fry until they have softened.

  8. Add a teaspoon of Korean Wok Spice to the veg and stir through.

  9. Then, add the shredded turkey to the pan and allow it to absorb the liquid.

  10. Take the pan off the heat and place the contents into a bowl.

  11. To make the teriyaki sauce (you can use a premade one if you prefer!), add the soy sauce, a smaller amount of honey, the rice wine vinegar, fresh ginger and some more of the finely chopped garlic into a pan. You can decide how much of each to add as everyone prefers it slightly different! Whisk the ingredients together and bring to the boil. Add a teaspoon of cornstarch to some water in a separate small bowl. You only need to use a small amount of water to turn the mixture into a paste. Add the paste to the pan to thicken the sauce. When it has thickened, you can remove it from the heat.

  12. If you have already made your sushi rice, place it into a bowl for serving. If you have a microwavable rice pack, you can put this in the microwave now before then adding to a bowl.

  13. Add your turkey and veggie mix to the bowl with the rice together with the raw sliced carrot and spring onions.

  14. Finally, drizzle over the teriyaki sauce to your liking and enjoy - you can have this meal warm or cold!
